Garlic chives (scientific name: Allium tuberosum) are native to Eurasia and North America, known by several common names such as Oriental garlic, Asian chives, Chinese chives, and Chinese leek, and used in food and seasoning. They contain protein, Vitamin A, B and C, mineral calcium, potassium, zinc, and carotene, and are high in dietary fibers, which can normalize bowel movements, iron, and chlorophyll. By using garlic chives in fried dishes or soups, the high amounts of vitamins they contain can be effectively absorbed.
For culinary use, garlic chives are widely used in flavoring butters, creams (including sour cream and cottage cheese), soups, eggs, seafood, oils, and vinegar, often as garnish and raw vegetables. If they are cooked over five minutes, they will begin to lose their flavor and nutrients.
